Pistachio Date Bark with Mānuka Honey

Ingredients:

  • 8-10 dates
  • 1/4 cup peanut butter
  • 1/4 cup melted dark chocolate
  • 1 tbsp Mānuka honey
  • 1/2 tsp cinnamon
  • 1/4 cup pistachios - crushed

Optional: coconut flakes, freeze-dried raspberries, or extra seeds for topping.

Directions:

  1. Remove the pit from each date and flatten dates onto parchment paper.
  2. Soften the peanut butter.
  3. Drizzle softened peanut butter over dates and spread.
  4. Sprinkle cinnamon.
  5. Drizzle Mānuka honey over the peanut butter.
  6. Drizzle melted chocolate on top and spread.
  7. Top with a pinch of sea salt.
  8. Crush pistachios and sprinkle on top of the melted chocolate. 
  9. Freeze for 3 hours or until hardened. 
  10. Slice and enjoy! Store the remaining date bark in the freezer.
