Delicious Kanuka Honey Lemon Bars

Bright, zesty, and naturally sweetened—these Lemon Bars with a Kanuka Honey almond crust are a fresh take on a classic treat. Made with wholesome ingredients like date sugar, fresh lemon juice, and BeeNZ Kanuka Honey, they’re the perfect balance of tangy and sweet with a buttery, melt-in-your-mouth base. A sunshine-filled dessert you’ll want to make on repeat! 🍋🍯✨

Ingredients:

Crust:

  • 1 1/2 cup almond flour
  • 3 TBS tapioca starch
  • 2 TBS BeeNZ Kanuka Honey (softened)

  • 1/4 cup coconut oil, lightly melted
  • 1/2 tsp vanilla
  • 1/2 tsp salt

Filling:

  • 3 large eggs
  • 3/4 cup fresh squeezed lemon juice (about 3 large lemons)
  • 1 cup date sugar
  • 1 tsp lemon zest

Instructions:

  1. Preheat oven the oven to 325F/ 160C.
  2. Prep an 8x8"/20cm baking pan with parchment paper.
  3. Mix crust ingredients together.
  4. Lightly press crust ingredients into prepared pan. 
  5. Bake for 20 minutes.
  6. Meanwhile whisk filling ingredients together. 
  7. Poke small holes into crust and pour the filling over it. 
  8. Bake for 25-30 minutes, or until the center is not jiggly. 
  9. Let cool completely (about 2 hours), then place in the refrigerator for another 2-3 hours to chill. 
  10. Slice into bars and enjoy!
