No Flour Kanuka Honey Cookies

These are the perfect snack for your lunch box or a healthier alternative to curb that sweet craving!

 

Ingredients
1 cup coconut flakes
1/2 cup sliced almonds
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/2 cup pistachios
1/2 cup almond flour ( powdered almonds )
1/4 cup + 2 tbsp Kanuka honey
1 tbsp oil

Directions

Pre heat oven to 350 F / 180 C. Line baking tray with parchment paper.

Mix all ingredients in a bowl. Scoop and place mixture on a baking tray lined with parchment paper. Shape, flatten and bring together using your fingers so they stick together.

Bake at 350 F / 180 C for 8-10 mins once edges start turning brown. When they can be lifted from the tray, transfer to a cooling rack.

Once cooled, drizzle with dark chocolate and store in an airtight container for up to 1 week!
