Hot Honey, Elevated with Mānuka and Kānuka Honey

Looking for a homemade hot honey recipe with real depth? This simple infusion combines the bold, earthy flavor of Mānuka honey with the light, floral lift of Kānuka honey - two wild New Zealand varieties known for their natural complexity.

With just a few ingredients and under 10 minutes of hands-on time, you’ll create a versatile spicy-sweet condiment perfect for drizzling over grilled vegetables, chicken, cheese boards, or even ice cream.

Ingredients

  • ¾ cup Mānuka honey - rich, earthy, grounding

  • ¼ cup Kānuka honey - light, floral, a little herbal

  • 1–2 tsp crushed red pepper flakes

  • 1 tbsp apple cider vinegar (optional, for brightness and contrast)


Instructions

  1. In a small saucepan over low heat, gently warm both honeys until loose and pourable.

  2. Stir in red pepper flakes and vinegar. Let it infuse for 5–7 minutes - watch the heat (no bubbling).

  3. Remove from heat and allow to cool to room temperature.

  4. Strain if you prefer a clean finish; leave the flakes in for something more rustic and bold.

  5. Store in a clean glass jar. Keep at room temperature for up to a month.
