Ingredients
- 1/3 cup BeeNZ Mānuka UMF5+ Honey. Note: Kānuka Honey works great as well!
- 1/3 cup maple syrup
- 4 tsp vanilla extract
- 1/2 tsp salt
- 1/2 cup oil of your choice
- 5 cups gluten-free old-fashioned rolled oats
- 1 cup walnuts, chopped
- 1 cup raw almonds, chopped
- 1/2 cup sunflower seeds
- 1/2 cup pumpkin seeds
- 1/4 cup sesame seeds
- 1/2 cup raisons
- 1/2 cup dates, chopped
- 1/2 cup dried cranberries
- 1/2 cup un-sweetened coconut flakes
Instructions

Adjust oven rack to upper middle position. Heat to 325F.

Line baking sheet with parchment paper.

Whisk honey, maple syrup, vanilla, salt and oil into a big bowl.

Add the oats, almonds, walnuts, sunflower seeds, pumpkin seeds, sesame seeds in with the liquid mixture and fold until thoroughly mixed. Transfer the oat mixture onto the baking sheet and spread it to make an even layer. Using the back of a ramekin or spatula, compress oat mixture until very compact.

Bake for 30-40 minutes rotating pan once halfway through. Depending on your preferred level of toasted oats, you may want to bake for an additional 10-15 minutes. Once baked, remove from oven and let cool for an hour.
- Break cooled granola into pieces and mix in dried fruit and coconut.
Storage
Store in an airtight glass jar in the refrigerator for up to 5-10 days.
