Ingredients:

Simple Syrup

  • 1/2-1 jalapeño diced. Remove seeds and veins
  • 1 cup fresh blackberries
  • 1/4 cup Kanuka honey

Margarita

  • 2 ounces (1/4 cup) silver tequila
  • 1-2 tablespoons blackberry jalapeño simple syrup
  • 1/2 lime, juiced
  • Lemon seltzer water
  • Ice
  • Blackberries and lime for garnish

Method:

  1. For simple syrup - Add the jalapeño, blackberries, and honey into a pan and simmer on low heat. Use a muddler or a spoon, muddle, until blackberries fall apart and flavours have a chance to blend.
  2. Remove from heat and strain into a jar, making sure all juice is squeezed out of berries and pepper.
  3. For margarita - Fill glass with ice, add tequila, lime, simple syrup and top with seltzer water. Garnish with blackberries and lime slices.
